With detailed instructions, you can make Bharwa Bhindi Recipe | Stuffed Bhindi Recipe at home. Chickpea flour and other ground spices are stuffed into slits in the okra. Typically, it is served as a side dish with dal rice or sambar rice, but can also be served with chapatis and rotis.

Okra recipes have always been my favorite, and I like to mix and match several different cuisines. Earlier this month, I posted a recipe for Kurkuri bhindi, a deep-fried curry recipe. Instead, I wanted to share a healthier version of bhindi recipe that uses less oil without sacrificing taste. A recipe that combines vegetables with spices and is stir-fried is the Bharwa bhindi recipe. It is possible to make this recipe with tomato onion gravy as well, but I have prepared it without any gravy. If the stuffed vegetables are served dry, they are always at their best. It is certain that your friends and family will appreciate it if you try it.

There is no time or effort involved in making this dry sabzi, and it can make a great side dish for most Indian flatbreads. Traditional Bharwa Bhindi recipes could only be found in remote dry regions of North India. It has, however, been widely acclaimed across India because of its simple taste and simplicity. The dry okra recipe does not pose the same risk of releasing sticky latex as gravy-based recipes. Therefore, it is one of the most popular dry curries among beginners.

Ingredients

  • 2 tbsp peanuts
  • 2 tsp fennel
  • 2 tsp cumin
  • 2 tsp coriander seeds
  • 2 tbsp sesame
  • 1 tbsp chilli powder
  • ½ tsp turmeric
  • 1 tsp aamchur
  • 1 tsp salt
  • 3 cloves garlic
  • 3 tbsp roasted besan
  • 25 bhindi / okra
  • 2 tbsp oil
  • 1 tsp cumin
  • pinch hing
  • 2 tbsp kasuri methi, crushed

How to Make Bharwa Bhindi with step-by-step

1. Firstly, in a pan dry roast 2 tbsp peanuts on low flame until they turn crunchy.

2. Add 2 tsp fennel, 2 tsp cumin, 2 tsp coriander seeds and 2 tbsp sesame.

3. Roast until the spices turn aromatic.

4. Cool completely, and transfer to the mixer jar.

5. Add 1 tbsp chilli powder, ½ tsp turmeric, 1 tsp aamchur, 1 tsp salt, 3 cloves garlic and 3 tbsp roasted besan.

6. Grind to fine powder without adding water.

7. Now cut the head and tail of bhindi and slit in the centre.

8. Stuff the masala in bhindi and keep it aside.

9. Now in a large pan heat 2 tbsp oil. Add 1 tsp cumin, pinch of hing and splutter the tempering.

10. Add in stuffed bhindi and roast on medium flame.

11. Now cover and cook on medium flame until the bhindi is cooked well.

12. Stir and cook until the bhindi is cooked from all the sides.

13. Add in leftover masala, 2 tbsp kasuri methi and mix well.

14. Finally, enjoy Bharwa Bhindi with roti or steamed rice.

Notes

  • Firstly, you should fry the bhindi in generous amounts of oil so that it does not become sticky during cooking.
  • It is also advisable to cook the masala slightly spicy; otherwise, the stuffing won’t taste good.
  • The addition of besan gives the dish a nutty flavor as well.
  • The taste of the Bhara Bhindi Recipe is great when it is served hot and prepared with small bhindis.
