A berry fruit twist on the basic lassi recipe – strawberry lassi with step-by-step instructions. The summer season in North India is marked by the popularity of lassies. For beating the heat, this is an excellent option.
For Holi, I’d like to share a few healthy recipes with you, and this strawberry lassi is one of them. It would have been nice to make a bhaang lassi or bhaang pakoras, but we don’t have access to such ingredients where we live. Bhaang, an intoxicant that is banned in many Indian states, is also one of the substances I learned about.
In Punjabi Lassi, people usually make a simple and sweet drink. It is also possible to add some flavors of seasonal fruits to the lassi and make a Fruit Lassi, for instance, this strawberry lassi or this mango lassi.
In addition to being served for brunches, lassis can be made into a filling breakfast. Preparation ahead of time and making lassi a few hours in advance is also an option.
Fresh yogurt should be used when making strawberry lassi. There should be no sour taste to the yogurt. In this case, I’ve used my own homemade curd (yogurt).
Using this easy method, you can easily produce large quantities of this recipe or even double or triple it. Due to the addition of both cream and rose water, this is a creamy thick strawberry lassi with a rose-scented scent. In case you do not like cream or rose water, you can skip them.
Ingredients
- 325 to 350 grams strawberries
- 1 to 1.5 cups Curd (yogurt), full-fat and chilled
- 2 to 3 tablespoon cream – 25 to 30% low fat cream or light cream
- 6 to 7 tablespoon sugar or honey, add as required and depending on the sweetness of the strawberries
- 1 to 2 teaspoon rose water
- 1 to 2 strawberries (sliced), for garnish
How make Strawberry Lassi
1. First rinse the strawberries a few times in water. Drain all the water and set the strawberries aside.
Remove the top green stems and then chop the strawberries if they are large-sized. It is better to use sweet tasting strawberries while making this strawberry drink.
Add them to a blender together with sugar or honey or your preferred sweetener. Blitz to make a smooth and fine puree of the strawberry and sugar or honey in the blender.
2. Then add chilled or cold curd (yogurt), low-fat cream or light cream and rose water. Make sure that the yogurt is fresh and has a sweet-sour taste. It should not be overly sour or tangy.
3. Blend till the yogurt is whipped well and evenly mixed with the strawberry puree. Don’t overdo. You can also pulse for some seconds instead of blending.
4. Pour in tall glasses and garnish with strawberry slices. Serve strawberry lassi immediately. You can also add some ice cubes while serving.

Serving Suggestions
- Enjoy strawberry Lassi as is or choose to top or garnish with herbs or nuts. For herbs, mint leaves are the best flavor pairing with both strawberry and yogurt. The lassi can be topped with some chopped mango cubes as well.
- Add some crunch to your lassi, by topping with almond slivers, pistachio slivers or chopped cashews.
- Love chocolate? Sprinkle some chocolate shavings or grated chocolate. Chocolate and strawberry are again a great pairing option.
- Top the mango lassi with some whipped cream for a richer taste and flavor.
Notes
- Make sure that the strawberries you use are fresh, ripe, and sweet tasting.
- There is no need to add as much sugar as you wish depending on the sweetness of the strawberries.
- You should make sure that the curd or yogurt is not overly sour or tangy.
